- Stage 01
Panjim
Land and go to Panjim rather than a beach, which is the entire premise. Fontainhas is the old Latin quarter: narrow lanes of Portuguese houses painted ochre, blue and green, with azulejo tiles and overhanging balconies. Walk it in the evening when the light is on the paint.
- Stage 02
Old Goa
Old Goa in the morning, which is now a cluster of churches in a field. The Basilica of Bom Jesus holds the body of St Francis Xavier, and Se Cathedral runs 76 metres end to end. A feni distillery in the afternoon, cashew or coconut, tasted properly.
- Stage 03
River & Food
A spice farm inland for lunch, then the Mandovi at sunset on a river cruise, which is unpretentious, has a live band and is exactly what it is. Dinner is the Goan-Portuguese end of the menu: xacuti, cafreal, bebinca, a pudding baked a layer at a time in anything from seven to seventeen or more layers.
- Stage 04
The Return
The municipal market in the morning, which is where Panjim actually shops, and the flight home. Three nights in the Goa that existed for four centuries before anyone came for the beaches.
